piedmont climate. South-facing on a hillside facing the
Pyrenees.
Winemaking:
Vinification by plot in temperature-controlled vats for
ptimal management of fermentation with delicate punching
down for 15-20 days.
Aged:
Aged in oak tuns and barrels for 24 to 36 months to ensure
optimal aromatic complexity.
Color:
Deep garnet with discrete orange highlights
Aroma:
The nose is light but harmonious and finally balanced with
notes of kirsch, rose, and cherry.
Taste:
A special wine with a great definition, finesse, depth, and
presence on many levels. A complex, elegant, and more
feminine wine with floral notes.
Pairings:
Goes well with duck a la orange or a platter of strong
cheeses.
